Ingredients

Serves : 2
  • 2 handfuls of spring mix lettuce or baby spinach


  • 1/3 of red onion,cut into thin rings


  • 1 ripe tomato, chopped or 1/2 cherry tomatoes


  • 1 ripe avocado, peeled and chopped


  • 1/8 cup goji berries or dried cranberries


  • 1/8 cup walnuts or pecans


  • Basil vinaigrette (1 see previous recipes)

Directions

  • Place all ingredients in a bowl and add the dressing. Serve immediately
